Yogurt Bites

Mix and match flavors! :)



1 1/2 cups vanilla yogurt

1 (30z) package sugar free Jello mix




Line muffin tin with 6 cupcake liners.

In a medium microwave safe bowl, combine yogurt and Jello mix, stirring to combine.

Microwave on high for 2 minutes, stirring after each minute

Fill each cupcake liner with about 1/4 cup of yogurt mixture

Chill cups for at least an until set

Mock Mashed Potatoes


1c Cauliflower

1tsp margarine

1tsp lite sour cream

Salt & pepper to taste



In a bowl with half a cup of water and cauliflower steam in the microwave for 6 minutes. Take the cauliflower out and pat dry with paper towel. Once dry put in a food processor with margarine, sour cream, and seasonings. Blend until smooth. Serve immediately.

Zucchini Chips



Olive Oil

Salt or other seasonings of your choice

(I used salt, pepper, and paprika)



Pre-heat oven to 425 degrees.

Cut the Zucchini into 1/4 inch slices. (If they are too thin they will just shrivel up!) Place zucchini in a bowl with some olive oil and other seasonings and mix until all the pieces are coated. Lay out the slices on a baking sheet in a single layer. Bake at 425 for 25-35 minutes or until golden brown.


Skinny French Toast

So I can’t really take all the credit for this recipe. I found it on the Lindora website and it did not disappoint!



1 slice whole wheat bread

1 egg

Dash ground cinnamon (I also added a dash of nutmeg and cloves)

Drop of artificial maple flavor, or vanilla extract

1 pkt artificial sweetener



Break egg in a shallow bowl add cinnamon, sweetener, flavor, and beat into egg until blended. Place the slice of bread in the bowl and allow to absorb the egg mixture, turning over the bread to completely saturate both sides. Place the bread in a small non-stick pan. Pour any left over egg on the bread. Cook bread on both sides until lightly brown. Serve immediately. (I sprinkled some cinnamon and Splenda on top after it came out of the pan!) 




Skinny Brains

Just like I have detoxed my body, I want to detox my life and all the dust bunnies in it.

Sunday. The day of rest. That, along with every other day starting at around 3:00 PM – when I get off work. For years, I have gone out of my way to never schedule anything on a Sunday or any day throughout the week, other than Friday and Saturday. This includes scheduling myself for things I should do. Looking back, I see that this was a pattern of laziness. That for some reason I couldn’t get myself to function while being upright and in motion. I only did chores when I felt stressed and I never did any sort of exercise. Somehow, just by changing what I put in my body, I am changing the way I think.

My mind feels healthier. I choose to walk on my breaks instead of sitting in the break room, because I want to. Not because the book said I should.
Though I do hate dragging myself out of my warm bed on Sunday, I do it with a smile. I choose to spend my Sunday morning at yoga, where all my stress from the week slowly leaves my body through my toes, right onto my yoga mat. I leave stronger, mentally and physically.

I tell myself, as long as I control what I am putting in my body, I think my body will take care of the rest. I hope for an ever-flowing fount of motivation. That I will always want to stay healthy because I have lived in the alternative already and that’s not a place where anyone should want to stay.




Those pesky cravings

All growing up, I’ve always had a sweet tooth.  In my home, there was never a shortage of candy or cookies and there was always a fairly large stock-pile of Little Debby snacks.  Needless to say, I didn’t exactly eat the best when I was young.

So here we are, on this diet.  I have plenty of bitter, salty, and/or sour flavors with it.  There are plenty of sweets, too, but I fear not enough to really satisfy that ever hungry tooth of mine.  Most days, I find myself day dreaming about chocolate cake, or chocolate chip cookies, candy bars…you name it.

Recently, I found myself looking at The Chive, a site with lots of random pictures.  This set in question was just one of their “Daily Awesome Randomness” ones.  As I swiped through the pictures, I came across one of a box of a dozen donuts.  Let me tell you, never in all my days have I come across something so beautiful and wondrous as that picture.  They looked immaculate and perfect in every sense of the word.  My mouth watered at the thought and I could only imagine how great they would taste.  I stared longingly at those glazed circles of wonder for what seemed like ages, though I’m sure it couldn’t have been anymore than a minute.

Finally, thankfully, I was able to break myself from the trance.  It was only then that I realized the focal point should not have been the donuts, but rather        the cleavage of the woman whose lap they sat upon.
